The Frankfurt Green Sauce Festival 2027 runs from 20 April to 1 May 2027. The market opens on 20 April, the evening contests run from 24 April to 1 May at 20:00, and the final is on Saturday 1 May. Presale opens on 26 October, and the herb mix carries an EU protected name.

Every spring, Frankfurt turns one sauce into a public contest. Seven restaurants compete each evening with their version of Grüne Soße, the herb sauce the city is known for, and the audience decides which one wins. The organiser calls the 2027 edition its jubilee, and the dates are now on its official site: the market opens on 20 April, the evening contests run from 24 April to 1 May, and the final falls on Saturday 1 May.

This guide is for the reader who plans that week. It covers the dates and what is still open, how the contest works, what the tickets cost, how to reach the city centre from the airport, where to eat and drink around the festival, and which day trips fit around the evenings. Where the organiser has not published a detail, we say so instead of filling the gap with a guess.

The dates, and what is still open

Two date ranges matter, and they are not the same. The market, with its food stands and its music stage, opens on Tuesday 20 April 2027. The evening contests, the shows that decide the sauce, run for eight nights from Saturday 24 April to Saturday 1 May, each starting at 20:00. The final on 1 May is the last of those evenings and the only one where the best sauce of the year is named.

The market’s 2027 hours are not on the site yet. In 2026, Journal Frankfurt reported that the market ran every day from 11 a.m. to 8 p.m. That is the pattern to expect, not a promise for 2027.

What the organiser has not confirmed yet

Market hours for 2027, whether entry to the market is free, whether any evening will be in English and the number of finalists are not stated on the official pages. Check the site before you book travel around them.

Presale is the other date to know. The official ticket page says the presale starts on 26 October. The page gives no year, but a Journal Frankfurt teaser dated 20 October 2026 announces the same date for the 2027 jubilee, so the sale opens on 26 October 2026.

The jubilee and the jury: how the contest works

The official site describes the evenings in plain terms. Around 650 guests taste seven sauces each night. The seven restaurants stay anonymous while the guests taste: the glasses are numbered, and each restaurant is revealed only after the vote. The audience is the jury. It votes with a card at the end of the evening, and a notary supervises the count.

The winner of each evening goes through to the final on 1 May, which names the best sauce of the festival. Restaurants can also apply to compete for the Kräuterkrone, the herb crown, and the official homepage invites them to do so for 2027. Most food festivals serve a dish. This one stages a vote, and that is what sets it apart from a dinner.

Guests per evening About 650, tasting seven sauces
Doors and start Doors at 19:15, show at 20:00, as the festival describes its evenings
Length About 2.5 hours, intermission included
Voting Paper card, counted under notary supervision
Final Saturday 1 May 2027

The organiser presents 2027 as its 20-year jubilee. The official site also says the contest has run since 2008, which means the count depends on where you start it. Treat the jubilee as the organiser’s claim rather than as a count you can check yourself.

The seven herbs and the protected name

The sauce is built from seven herbs: borage, chervil, watercress, parsley, burnet, sorrel and chives. The sources we read agree on that list. They disagree on the base, which can be crème fraîche, quark or yoghurt depending on the kitchen, and some recipes add vinegar or oil. Ask the cook what is in the bowl rather than assuming one recipe, because every house keeps its own.

The name has a legal side too. “Frankfurter Grüne Soße” has been a protected geographical indication of the European Union since 2016. Journal Frankfurt, reporting the registration, described the rules: the herbs must be grown and harvested in Frankfurt or its immediate surroundings, they are processed by hand, and no single herb may make up more than 30 percent of the mix. A green sauce made outside that area can still be called Grüne Soße, but it does not carry the protected name. We did not read the regulation itself, so treat these as the rules as reported.

For a taste before you travel, the sauce is served in the city’s taverns all year round. Arriving with that first bowl already in mind makes the evening’s seven versions easier to compare.

Tickets, prices and what is included

The official ticket page gives two price grids, one for the evening contests and one for the final. Each has three categories, and each category has a front row and a back row. The figures are per person, before the booking fee.

CategoryEvening contest, front / backFinal, 1 May, front / back
Category 186 / 82 euros106 / 102 euros
Category 274 / 70 euros94 / 90 euros
Category 362 / 58 euros82 / 78 euros

The page gives these prices without a year. They are the figures published for the 2027 jubilee, and we will check them again when the sale opens. A booking fee, written as “VVK-Gebühr” on the page, is added on top. The amount is not in the text we checked, so budget for it on top of the grid.

The evening ticket covers the show, seven green sauces from the seven restaurants of that night, served with potatoes and eggs, and the drinks on offer, which include regional wines, award-winning ciders, beer and soft drinks. The official list also names the Fleischwurstparade. The page gives its name only, with no description of its format or its place in the evening, so do not plan around a time for it.

Buy through the official channels. Reservix runs the online sale, the presale outlets are listed on adticket.de, and the ticket hotline is 069 90283986. Groups of eight or more book through a form on the site. We found no reliable source on resale, so our advice is to buy from those channels only.

A walk through the Old Town before the first evening

The best-reviewed walk in our Frankfurt shortlist, with 1,386 reviews, is an English-language orientation of the historic centre. The listing gives a duration of 120 to 180 minutes. It is the right way to learn the layout before the festival tents, and it works best on a morning, since the contest starts at 20:00.

The lineup, as announced

The official homepage lists a guest artist for each evening, with a master of ceremonies who opens the show with a five-piece festive band. The guest plays until the interval. Then the tables are set and the tasting begins. The weekdays below are ours, calculated from the dates.

Lineups change, so treat this list as the one announced so far. The site does not name the 2027 host, and we do not name one either.

Getting there: from the airport to the Roßmarkt

Frankfurt Airport is the easiest arrival point. The regional railway station sits on the lower level of Terminal 1, and the S-Bahn runs from there to Frankfurt Hauptbahnhof, the main station. Deutsche Bahn gives a train about every 15 minutes during the day. The journey takes about 10 to 12 minutes, a figure from secondary sources, since the official timetable page gives the frequency but not the travel time. Terminal 2 has a free shuttle to Terminal 1, which adds five to ten minutes.

Fares change, and the sources we read do not agree on the price, so check the current fare in the DB or RMV app before you travel. A long-distance ticket to Frankfurt can also be used on the S-Bahn for the last leg, according to Deutsche Bahn’s airport page, so check the rules for the ticket you hold.

From the Hauptbahnhof, the reference point is the Hauptwache, a central square a short walk from the Roßmarkt. Most S-Bahn lines call there, except the S7, and the U4 and U5 U-Bahn lines stop there too. We did not time the walk, so allow a few minutes on foot and check the route on your phone.

We do not recommend driving to an evening contest. Car parks are listed near the Hauptwache and the Konstablerwache, but the centre is busy in the evening, and the sauce is better with a drink.

Where to eat and drink around the festival

Frankfurt’s taverns are the best place to try the sauce before the contest, and many of the best-known ones are in Sachsenhausen, across the River Main. The classic walk starts at the Römerberg and crosses the Eiserne Steg footbridge. Taking the bridge on foot or a tram both work, and the time from the Roßmarkt was not measured in our sources.

Choose a family tavern over a restaurant with a window full of bowls. That is the simplest rule for avoiding the tourist version of the dish. Apfelwein Wagner, a historic cider house on Schweizer Straße, is one of the names you will see most often in the area. We did not confirm its opening hours, so check them before you go.

Apfelwein is the local drink, a sharp, cloudy cider wine served in a grey stoneware jug called a Bembel, in a glass with ribbed sides called a Geripptes. It tastes closer to a dry cider than to apple juice. On a Friday the cider houses fill early, so arrive before 6:30 p.m. if you want a seat, a tip from a 2026 food guide.

For a morning before the evening, the Kleinmarkthalle near the Zeil is a well-known stop for local produce. A 2026 food guide says it closes around 6 p.m. and is closed on Sundays, so check the hours on the day.

A German beer tasting in the Old Town

If you want drinks other than cider, this private tasting covers German beers in the Old Town, with four to eight beers and craft beers included. The listing gives a duration of 120 to 240 minutes. It costs less than the Rhine wine day below, and it is a private booking, so it suits a small group rather than a solo traveller.

It is not a green sauce or Apfelwein tour. None of the Viator products in this guide is one, and we did not find one in the Frankfurt catalogue with enough reviews.

A day in the Rheingau, and the day trips

The Rheingau, west of the city, is about an hour away by train, and a full wine day from Frankfurt covers the Rheingau and the Rheinhessen. Expect Riesling, sparkling wine and Pinot. The day is long, with a listed duration of 420 to 480 minutes, so it leaves little room for an evening contest on the same day. Keep it for an afternoon you do not plan to spend at the Roßmarkt.

Rhine Valley wine tasting from Frankfurt and Mainz

The only full wine-tasting day in our set, with 89 reviews and a rating of 4.79. The listing covers the Rheingau and Rheinhessen, with Riesling, sparkling wine and Pinot on the program. It is a different format from the Rheingau’s own festival, which we cover in our Rheingau gourmet wine festival guide, so read the two together if you are choosing between them.

Four private day trips and tours fit around the festival week. Their availability was checked for 24 April to 1 May 2027 on 21 October 2026, so check it again closer to the date.

Heidelberg Castle and City, a private day from Frankfurt

A full day with Heidelberg Castle and the old town, as a private tour. The listing gives a duration of 330 minutes. It has the largest review base of the day trips, with 389 reviews and a rating of 4.72, and it is open on seven of the eight days we checked.

Rüdesheim and Eberbach Monastery, by private driver

A private day with a local driver from Frankfurt to Rüdesheim and the Eberbach Monastery. The listing gives 300 to 360 minutes and does not mention a wine tasting, so it sits beside the wine day rather than repeating it. It has 10 reviews and a rating of 5.0.

A plan for the festival week

The week has two rhythms: the day, for the market and the walks, and the evening, for the contest. The plan below is a model. Slot in the evenings you want once the lineup is confirmed.

Tuesday 20 April, opening day. Arrive in the morning if you can, walk the Old Town, and visit the market in the afternoon if its hours are published by then. Keep the evening free, since the first contest is on Saturday.

Saturday 24 April, first evening. Spend the afternoon in Sachsenhausen, with a family tavern and one glass of cider, then walk back across the river to the Roßmarkt for the 20:00 show. The show runs about 2.5 hours with the interval, so plan the journey back for the late evening.

Thursday 29 April, midweek. This is the day for a longer trip. Heidelberg or Rüdesheim fits well, as long as you return in time for the evening show, or skip the show that night.

Saturday 1 May, the final. The final is also a public holiday, Labour Day, so expect a busy city and check the transport timetable for the day. Buy your ticket early, since the final is the most expensive evening.

Mistakes to avoid

Most of the errors come from trusting the wrong date or the wrong listing. These six cost travellers the most.

  • Do not plan around an aggregator's dates of 20 to 30 April. The official end date is 1 May 2027.
  • Do not assume the market is free to enter. The official pages do not say so.
  • Do not buy from a resale site. Use Reservix or the listed presale outlets.
  • Do not book a Viator product as a green sauce tasting. None of them is one.
  • Do not assume an English evening. None is announced for 2027, although the 2026 final was held in English.
  • Do not book non-refundable travel before the market hours and the final ticket prices are on the official site.

Variations by profile

First-time visitors should start with the English walking tour, then eat in Sachsenhausen after the market and keep one evening for the contest. One show is enough to understand the format.

Couples have the most room. The final is the evening with the most at stake, and the front-row tickets cost more, as the grid shows. A wine day in the Rheingau pairs well with one evening, if the timing works.

Families should check the rules before booking, since the official pages do not describe age limits or children’s tickets. The evenings run late, the show lasts about 2.5 hours, and the ticket includes alcoholic drinks, so think about who is in the group. Ask the organiser by phone on 069 90283986 before you commit.

Travellers on a tight budget should take a category 3 back-row ticket for one evening, which is the lowest published price at 58 euros before the booking fee, and combine it with the 30-euro walking tour and a family tavern. Those two prices come to 88 euros per person before fees.

Travellers with reduced mobility should contact the organiser before booking. The official pages do not describe step-free access, seating or the layout of the tent, so the answer has to come from the source.

If you are weighing this festival against another food event built on one local product, our Beaujolais Nouveau guide in Beaujeu covers a different kind of tasting season, with its own rules and calendar.

Practical info

FAQ

When is the Frankfurt Green Sauce Festival 2027?

The market opens on Tuesday 20 April 2027, according to the official homepage. The evening contests run for eight nights, from Saturday 24 April to Saturday 1 May, each starting at 20:00, and the final is on Saturday 1 May. Market opening hours for 2027 have not been published yet, so check the site in the weeks before you travel.

How much do tickets cost, and when do they go on sale?

The official ticket page lists evening tickets from 58 to 86 euros per person, depending on the category and the row, and final tickets from 78 to 106 euros. Presale opens on 26 October. The page gives no year, but the teaser announcing the sale is dated 20 October 2026. A booking fee is added on top, and its amount is not in the text we checked.

Do I need German to enjoy the evenings?

Yes, the evenings are run in German, and the official pages do not announce an English evening for 2027. In 2026, the final evening was the first one held entirely in English, according to Journal Frankfurt. Without German, you can still follow the tasting, since the seven sauces, the potatoes and the eggs need no translation, and the numbered glasses make the vote easy to follow.

Can I visit the market without a show ticket?

The official 2027 pages do not say whether the market is free to enter. A regional tourism listing says entry to the grounds is free and that only the evening needs a ticket, but we could not open that page to confirm it. Ask the organiser before you plan a visit around free entry.

What does the evening ticket include?

The ticket covers the evening show, seven green sauces from the seven restaurants of the night, served with potatoes and eggs, regional wines, award-winning ciders, beer and soft drinks. The official list also names the Fleischwurstparade, but the page does not describe its format or its timing during the evening.

Is there a Viator tour of the green sauce?

No. None of the Viator products in this guide is a green sauce or Apfelwein tasting, and our catalogue search found no such product with enough reviews to recommend. The closest options are a Frankfurt walking tour, a German beer tasting, a Rhine wine day and day trips to Heidelberg, Mainz and Rüdesheim.

How do I get from Frankfurt Airport to the festival?

Take the S-Bahn from the regional station on the lower level of Terminal 1 to Frankfurt Hauptbahnhof, about 10 to 12 minutes by our secondary sources. Trains run about every 15 minutes during the day. From the station, walk or change toward the Hauptwache, close to the Roßmarkt. Check the fare in the DB or RMV app before you travel, because the sources we read do not agree on the price.
